  • Mix corn meal, buttermilk, eggs and salt. Bake in a greased skillet until brown.
  • While above is cooking.. (You can boil the chicken before or after whatever works best) place a whole chicken in water and boil until done.. If it is a small chicken place a chicken bouillon cube to make a richer broth.
  • When the cornbread is done and cooled, tear into small pieces into a large bowl. Put the harder crust pieces aside and don't use.
  • Add chopped onion, chopped celery and some shredded pieces of chicken. Then add the chicken broth a little at a time until the mixture is soupy but not runny.
  • Pour into a casserole dish and bake at about 375 for 45 minutes or slightly browned on top. Let it sit for about 5 minutes before serving.
