  • Boil chicken until cooked, let cool then chop. Mix jar of salsa with the chicken, heating over low heat. Heat thoroughly and then set aside. Mix 2 cans of cream of chicken soup with the sour cream.
  • Place approximately 2 tablespoons of chicken/salsa mixture in tortilla; spread. Sprinkle cheese over mixture, roll up into enchilada. Secure with wooden toothpick. Line the enchiladas in a pan, and pour sour cream/soup mixture over the enchiladas.
  • Top with remaining cheese.
  • Cover with foil and bake in 325 degree oven for 25-30 minutes. Remember to take the toothpicks out before eating. ENJOY!
