  • 1. Scramble 3 eggs in small mixing bowl. Add salt and pepper to taste. Cook over medium heat stirring often until cooked hard. Set aside.
  • 2. Dice chicken into small bite-sized pieces.
  • 3. Stir together soy, teriyaki sauce, ginger and garlic in a fry pan. Bring to a low simmer. Add chicken, cook until chicken is no longer pink. Reserve some of the pan juices. Drain and set aside.
  • 4. If using ham, place diced ham in fry pan. Sprinkle with paprika and heat through, stirring to keep ham from sticking. Set aside.
  • 5. In a wok or large frying pan, add oil and onion. Cook onion until tender. Add rice to pan and stir to mix onion and rice. Fry rice for 2 minutes stirring often to keep from sticking. Sprinkle teaspoons of the reserved pan juices over rice to color and keep from sticking. Avoid adding too much as you want the rice to brown and not be too watery.
  • 6. As rice browns, add chicken (and ham), eggs and peas/carrots mix. Stir thoroughly to mix. Continue to stir until mixture is evenly heated.
  • 7. Serve hot with soy sauce.

Notes

This dish is excellent company for several oriental dishes or can be a filling meal by itself.
