  • Preheat oven to 400°. Season chicken with salt & pepper. In wide Dutch oven, over med-high heat, warm oil. Brown chicken 2-3 minutes per side; transfer to plate. Add garlic to pan; cook, stirring for 1 minute. Remove pan from heat.
  • Add chicken, rosemary, thyme & zest; stir to combine. Cover pan, transfer to oven & roast 15- 20 minutes. Baste chicken with accumulated juices. Continue roasting, uncovered until chicken is cooked through, about 25- 30 minutes.
  • Transfer chicken to platter; cover loosely with foil; leave garlic in pan; set pan over med-high heat; mash garlic. Add wine & cook 3 minutes. Add stock; cook, stirring occasionally, 5 minutes. Whisk in butter, a few pieces at a time. Season with salt & pepper. Transfer to sauceboat. Pass alongside chicken.
