  • Heat a large skillet over medium high heat. Add olive oil and butter. Place flour in bowl. Season chicken with salt and pepper (I add it to flour). Dredge chicken in flour and let sit a couple of minutes.
  • Cook chicken 8 - 10 minutes until browned. Add wine and scrape up brown chicken bits as wine cooks down and bubbles, about 1 minute. Add stock to skillet. Combine cream and mustard and add to stock. Add grapes to the pan and turn chicken and grapes to coat and combine with the sauce.
  • Simmer 10 minutes over low heat.

Special Equipment Needed


Serve with rice or couscous and use chicken stock in place of water. I cut the large grapes in half but left the small ones as is. I used dry vermouth in place of wine because you can store the unused and I think it has a better taste in this dish.
