  • Boil chicken for 45 min -1 hr or until fully cooked. After that time, drain and unskin the chicken. Put the chicken in a big skillet. (You don’t need to add butter or oil because the chicken is moist from the water.) Season the chicken with chili powder and adobo (eyeball the measurement of each seasoning up to 1 1/2-2 tablespoon each) **seasoning varies by individual taste preference Let it sit and cook for 5 minutes.
  • During the 5 minutes dice the onions into medium size pieces. Cut the quesadilla cheese into cubes. Throw the onions and cheese into a bowl and crumble the pig skin chips in the bowl.
  • Now put Italian spaghetti sauce into the skillet, mix well. Toss the ingredients from the bowl into the skillet with the rest of the chicken. Let it cook for 5-10 minutes thoroughly or give more time if needed
