  • Marinade chicken breasts in Italian dressing anywhere from 30 minutes to overnight. Brown chicken in a pan.
  • While chicken is browning, melt butter in another pan and add sliced peppers and onions. Sautee till tender.
  • When chicken is done, place on a cookie sheet and cover with onion / pepper mix. Place a slice of Swiss cheese over each chicken breast.
  • Bake at 350 for 5 minutes or till cheese melts. Place on a bed of brown/wild rice (optional).


This is a GREAT meal to make ahead of time for large dinner parties. Do all the steps above except the cheese, cover chicken/pepper/onion mix on a cookie sheet and cover with aluminum foil in a 150-200 oven for up to an hour before dinner. 5 minutes before the meal uncover, place cheese on, and turn oven up or broil till cheese melts. This is a meal that is very filling and looks like you really worked at it but you'll know different!
