  • In large skillet brown chicken in butter; season with salt and pepper.
  • Combine brown sugar, cornstarch, ginger, orange marmalade and lemon juice to the orange juice, mixing well to dissolve cornstarch: add to skillet and bring to boil: cover and reduce heat and simmer for about 25 minutes if using chicken breast or 7-10 minutes if using chicken strips or until done.
  • Uncover pan last 5 minutes if you want a thicker sauce. Serve sauce over chicken.


I use the orange marmalade at room temperature, this helps the other ingredients dissolve quicker. I serve the chicken over a bed of rice with sauce.
