  • Boil the chicken breast until thoroughly cooked and set aside to cool. If you already have leftover chicken, use 2 cups of cubed chicken. When chicken is cool, cube into very small pieces. Set aside.
  • Preheat oven to 350 degrees F. Dice the peppers and onion and place in a large bowl. Add spices to taste, if desired. Add shredded cheese and soup. Mix until all the vegetables and cheese are coated. Fold in chicken.
  • Grease a cookie sheet with olive oil. Unroll and separate each crescent roll triangle onto the cookie sheet. Using a teaspoon, place one scoop on the wider area of each triangle. Fold the two short ends up toward the center. Seal the pouch with the longer point of the triangle.
  • Bake at 350 degrees F for ten minutes, or until tops of pockets begin to brown. Let cool for approximately five minutes and serve. Refrigerate leftovers after they cool.

Special Equipment Needed


These are great for pot luck dinners or as appetizers at parties. If the pockets cannot be sealed before baking, do not panic. They will still taste great! To reheat, place on an oven-safe dish and cover with tin foil. Bake at 325°F for 15 minutes and serve.
