  • Heat olive oil in large skillet. Add chicken strips and brown. Add garlic, basil, and parsley. Add sherry.
  • When reduced, add tomatoes and reduce heat to low.
  • In separate skillet heat oil and fry peppers and onions. When they begin to caramelize, add to chicken skillet and cook for 20 min.

Notes

Serve on rice or pasta.
