  • Place chicken breasts in a large pot of water and boil until done. Cut up cooked chicken into bite sized pieces.
  • In a bowl, mix together soup, sour cream, salt, pepper, and chicken. Spread evenly onto bottom of a casserole dish.
  • Melt butter and mix with crushed crackers. Spread crackers evenly on top of chicken mixture then sprinkle with poppy seeds.
  • Bake at 350°F until bubbly or brown, approximately 15 - 20 minutes.

    I had this dish delivered to me by a friend when I was down with a broken arm. It did not take me long to find out where it came from and now it is one of the most requested dinner entrees at our house. I use the fat free sour cream to cut down on the fat content of the dish and it still tastes wonderful!
