  • Brown minced garlic in olive oil until tender. Add chicken breasts cut into pieces.
  • When chicken in no longer pink, add tomatoes with juice and frozen spinach.
  • When spinach begins to break up, add basil, covering with noodles. Add about 1/2 cup water is there is not enough liquid. Simmer until noodles are done.

Isn't a terribly pretty dish (it is colorful!) but the flavor is great.

Rated 5 out of 5 by from These were easy and scrumptious. These were easy and scrumptious. I used some white and russet potatoes I had left, so I baked it at a slightly higher temp for the same amount of time. They looked as good as they tasted!
