  • Place chicken breasts in slow cooker for about 2 hours or until tender (do not over cook or chicken will dry out).
  • Remove chicken from slow cooker and let cool, then dice up chicken (dice in small chucks) and place in a medium size mixing bowl. Next dice up carrots (these must be very small chucks), and dice up cilantro and green onions (only the stems need be added). Place all these items in the mixing bowl and fold together.
  • Next add your mayonnaise (this should be to taste), Tapatio sauce and fold entire contents together. The chicken will breakdown to allow smoother spread. Place in refrigerator and let cool for about 2 hours or so.
  • To serve all you need to do is take your corn tortilla tostado and spread the salad to your desired thickness. I like to add more Tapatio sauce. I hope you all enjoy this refreshing appetizer.

I hope you all enjoy this little appetizer; everyone who has tasted this creation of my wife's truly enjoys it and just can't get enough. Ingredients are mostly to taste. I like to add enough mayonnaise to allow the spread to be more moist and not too much Tapatio sauce so that it will not be too hot. If some like it hotter they can add it themselves after they spread it on there corn tortilla. Thank you so much.
