  • Preheat oven to 400°F. Spread dried chilies on baking sheet and roast until fragrant, about 4 minutes. Transfer to a medium bowl. Spread cumin seeds on baking sheet and roast until smoking and very fragrant, about 6 minutes. Stir in oregano and roast 2 minutes more. Add to the bowl with chilies. Add paprika and salt to bowl and combine ingredients. Let cool slightly.
  • Transfer to a food processor and process until the mixture is finely ground.
  • 2 tablespoons of this rub is sufficient for 1 1/2 pounds of your chosen protein.


Before roasting the chilies, open a window or turn on the oven fan to avoid irritating eyes and throat.
