  • 1. Preheat the oven to 350ºF. Spray an 8-inch square baking pan with nonstick cooking spray.
  • 2. Combine the flour, cocoa powder, ginger, cinnamon, cloves, nutmeg, and salt in a small mixing bowl.
  • 3. Cream together the butter and brown sugar in a large bowl using an electric mixer. Stir in the molasses. Beat in the eggs, scraping down the sides of the bowl once or twice as necessary, until smooth.
  • 4. Dissolve the baking soda in the hot tap water. Stir half of the flour mixture into the egg mixture. Stir in the baking soda mixture. Stir in the remaining flour mixture. Stir in the chocolate chips.
  • 5. Pour the batter into the prepared baking dish.
  • 6. Bake the gingerbread until it is just set in the center, 22 to 25 minutes. Let cool completely on a wire rack before cutting into 16 squares.
