  • Preheat oven to 375 degrees. In large bowl, combine sugar, 3/4 cup butter, vanilla and egg yolk; beat until light and fluffy. Add flour and cocoa; beat until well mixed.
  • Shape rounded teaspoonfuls of dough into 1-inch balls; place 1-inch apart on ungreased cookie sheets. With index finger, make indentation in center of each cookie.
  • Bake at 375 degrees for 7-9 minutes or until set. Immediately remove from cookie sheets; place on wire racks. Cool 10 minutes or until completely cooled.
  • Meanwhile, in medium bowl, combine all filling ingredients; beat until smooth. Spoon about 1/2 teaspoon filling into each cooled cookie.
  • Press cherry into filling. In small saucepan, combine chocolate chips and oil. Cook over low heat until melted, stirring constantly. Spoon or drizzle melted chocolate over cherry on each cookie. You can also put into small resealable food storage plastic bag, cut the corner and drizzle. Let stand until chocolate is set.

Notes

This is not my personal recipe, it is from a magazine. I have made these several times on Holidays and they are wonderful. They can be a lot of work, but worth the extra effort. Your guests will rave about them, my friends and family always do. Make sure you dry the cherries before using, you will end up with a juicy/sloppy mess otherwise.

I'm so glad you submitted this recipe. I have made these before and they are my daughters favorites. As I was preparing my grocery list, I couldn't find this recipe anywhere!! Thanks and yes they are a bit work intensive, but not hard at all to make and well worth it!!
