  • Preheat oven to 325°F. Spray 2 mini cupcake pans with Pam (makes about 12-18 cup cakes). Roll out pie crust as per directions on package. Using a small biscuit cutter (approximately 2 inches in diameter), cut out enough circles to fill each space.
  • Brown the pork sausage in a skillet over medium heat; add onion and continue cooking until tender. Reduce heat to low and add cream cheese. Stir until well combined. Place about a teaspoon of sausage mixture into each crust (a small cookie scoop works great).
  • Bake in oven about 12 minutes, or until crust browns and mixture is lightly browned. Cool about 7-10 minutes, and remove from pans. Arrange on decorative platter.


I make these every year for the Christmas Eve celebration at my dad's house, hence the name. Sometimes I sprinkle shredded Swiss cheese, along with a little pimiento, on top before baking - nice festive touch. If you don't want to mess with the pie crust, prepare the sausage and cream cheese mixture as above. Spread into 8x8 square pan, and bake for 15 minutes, or until bubbly. Serve with your favorite crackers.
