  • Preheat to 350°F. In a large bowl or pot, combine oats, nuts, seeds, wheat germ, flour, and salt. Mix together honey, water, and vanilla, and stir into dry ingredients.
  • Spread on a lightly oiled baking sheet and squeeze mixture together to form small chunks, but don't overcrowd; the chunks need to bake clear through.
  • Roast until golden brown, about 10 to 20 minutes. As it bakes the granola may need stirring to brown evenly. Cool thoroughly before storing.

Notes

The mixture is great before you cook it, I wonder if there is a way to make it into some kind of meal, and store it well... Anyways, after cooking I like it much better soaked overnight in milk, and then topped with some sliced peaches, plums, or some blueberries. Also, you can add craisins when you take it out of the oven. I've had others who say they like it just the way it is after you cook it, but I think it is better soaked, like muesli. You could probably also add some coconut into the mixture.
