  • 1. In large bowl combine eggs, all the cheeses, and the parsley flakes.
  • 2. Cook jumbo shells in lots of boiling water until al dente. Careful! Don't overcook them. (If they are limp, they'll be hard to fill)
  • 3. Drain and stuff each shell with a tablespoonful of the cheese mixture.
  • 4. In a large baking dish, cover the bottom with about a 1/2 inch of sauce.
  • 5. Arrange stuffed shells side by side in the sauce. Dribble the remaining sauce over the top and down the center of the shells.
  • 6. Sprinkle additional parmesan cheese over the top (optional) and bake, covered, in the oven at 350 degrees until hot and bubbly.
  • 7. Serve and place unused portions in the refrigerator covered or you can freeze them and use at a later time.
