  • Place the spinach tortilla on a plate and put 2 Tbsp. of the parmesan cheese in the center of the tortilla.
  • Next add 2 Tbsp. of the cilantro leaves and all of the thinly sliced red onion on top of the cheese. Add the sour cream, cinnamon, grape tomatoes, and the remainder of the cilantro. Add the lime juice and the EVOO. Top it off with the remaining parmesan cheese.
  • Fold the bottom up. Fold the sides in. Fold the top down. Hold together with a toothpick.

Special Equipment Needed


You may want to try this recipe with different amounts of red onion. If you like red onions you may think it is just right or might need to add a little more. Sometimes the red onion can be a little overpowering to the rest of the flavors. If you tend to taste a lot more of the red onions than any of the other flavors, don't add so much to the recipe.
