Classic Chicken, Cheese and Broccoli

  • 1. Add oil and chicken to medium skillet. Cook 5-10 minutes or until cooked through and no longer pink. Drain out oil and fat. Add chicken back into the pan.
  • 2. Place frozen broccoli and 2 Tbsp. water into a microwave-safe casserole and cook in microwave for 5 minutes, with the lid on. Drain. (The broccoli will still be some-what frozen, you just need to get most of the chill off first.)
  • 3. Add both cans of soup and the milk to the cooked chicken and simmer with the lid on for 10 minutes or until sauce thickens. Then add the semi-frozen broccoli to the pan and cook for 10-15 minutes or until the broccoli is fully cooked to your liking. (I like mine to have a little crunch to it)
  • 4. Serve chicken mixture with the prepared rice. Enjoy!


This is a classic casserole that my mom has prepared for our family for years. Some may know it already, I just thought I'd share our version.
