  • Fill a Dutch oven or a deep fryer half full with vegetable oil. Heat oil to 350°F.
  • In a shallow bowl, combine cornmeal, flour, salt, cayenne pepper, and garlic powder. Coat catfish fillets with mixture, shaking off excess.
  • Fry catfish in a single layer for 5 to 6 minutes, or until golden brown, turning several times. Remove and drain on paper towels.

    I used this recipe last night and the catfish turned out yummy! The coating was very crunchy and delicious! I added a sprinkle or two of Tony Chachere's Creole Seasoning as well. I plan on saving this one and using it again. Thanks!
