  • Bring water to a boil, add seasoning and shrimp. Remove shrimp after 1 minute and allow them to cool slightly***.
  • Heat oil in a cast iron skillet or Dutch oven (about 2" deep) to 350 degrees. Peel shrimp leaving tails intact. Combine pancake mix, beer and coconut in a small bowl (pour beer slowly to prevent foaming). Dredge shrimp in flour then batter.
  • Fry a few at a time 45 seconds on each side until golden brown; drain on paper towels. Use a pineapple based marinade for dipping. Enjoy!

Notes

* You can eliminate this step but I think it adds another layer of flavor to the shrimp. **My personal preference is organic unsweetened coconut, so, when using this add 2 Tbsp sugar or a subst to the batter. ***Over-boiling makes shrimp tough, remember you'll be frying them in hot oil also.
