  • Preheat oven to 350 degrees. Mix together eggs and bananas. In another bowl mix together flour, oats, salt, sugar and baking soda. Fold in egg and banana mixture until combined. Add coconut.
  • Spoon into greased muffin tins or use paper muffin cups (recommended). For topping, mix together all ingredients and cut in butter until mixture is crumbly. Sprinkle over top of muffin mixture.
  • Bake in 350 degree oven for 20-25 minutes or until toothpick inserted in center comes out clean. Sprinkle coconut over top of muffins in last 5 minutes of baking to toast.

Notes

Tastes best warm with a hot cup of coffee. No oil or butter in recipe keeps it much lighter.
