  • Cook red beans and rice according to package directions, minus 10 minutes, and replace part of the water with the juice drained from the tomatoes.
  • In the meantime, heat oil in skillet. Saute onion in oil until translucent. Nickel-cut sausage and add to skillet; cook until lightly browned.
  • 10 minutes before red beans and rice are to be done, add tomatoes, onions, sausage, chicken and shrimp; cover and continue cooking 10 minutes, or until rice is tender. Remove from heat and allow to stand about 7 minutes. Serve with French crusty bread or honey corn bread.


My family loves this recipe - better than the recipe from a famous TV chef that requires what seems like hours of prep time. One busy day I made a mistake and added an extra can of tomatoes, juice and all...was more like a thick soup. Very good, though. This is easy to double for a crowd (think Superbowl or Stanley Cup finals) using two package mixes and doubling add-ins.
