  • Rinse ham. Score fat and rind with a sharp knife in a diamond pattern, being careful not to cut deeply into the ham itself.
  • Place, cut side down, on a rack in large baking pan and cover tightly with foil. Bake at 350 degrees for 2-3 hours, depending on the size of the ham.
  • Remove from oven. Remove and keep foil. Set ham on a cutting surface and trim off all fat and rind.
  • Using a pastry brush, cover ham thickly with mustard. Combine brown sugar and gingersnaps, and pat thickly and evenly over all the ham.
  • Drain excess fat from baking pan and put ham back on rack. Cover tightly with foil. Bake for one hour at 350, then remove foil and bake an additional 45-60 minutes uncovered, until crumb crust is dried.
  • Remove ham from pan, let rest on a cutting surface before carving. Depending on the size of the ham, can serve up to 10 people.

Special Equipment Needed


For an additional zest, use a clean spray bottle, and spray the crumb-coated ham lightly with bourbon, before the last covered baking period.
