  • Mix sugars, butter and shortening until creamy. Add eggs, beat until light. Add pudding and vanilla. In separate bowl combine flour, salt and baking soda. Add to sugar mixture and mix until well combined. Mix in chocolate and nuts.
  • Scoop with a teaspoon, making 1 1/2 inch balls, roll between hands and place on greased baking sheet about 3 inches apart.
  • Bake in a preheated 365 degrees F oven for 9-12 minutes, depending on desired color. Let cool in pan and transfer to wire rack. You might need to play with the cooking time and temperature to get the desired cookie. The original recipe said to bake at 375 degrees F. I don't like my cookies that dark.

I bake my cookies one dozen at a time to insure uniform color. Here are some variations to try: For oatmeal cookies, add one cup quick oats, and only add 2 1/4 cups flour plus 1 teaspoon cinnamon and 1/2 teaspoon cloves. This recipe is also good with 1/2 cup dried cranberries and up to 1/2 cup walnuts. I used this variation in the Western Idaho State Fair and won Second place: Add 1/2 cup cocoa powder and only add 2 1/2 cups of flour. 1/06 I change my recipe all the time! Here is another variation: All the same ingredients but, 2 1/2 cups flour plus a heaping 1/4 cup quick oats and only a teaspoon of vanilla. It adds a little extra texture and height to the cookie. Also, I accidentally bought cheesecake flavor pudding and I really like it in the batter. It's not as sweet as the vanilla.
