  • Break white bottoms off asparagus. Blanche asparagus in boiling water approximately 1 minute or just until crunchy.
  • Immediately drain from hot water and place asparagus in an ice water bath to reduce temperature quickly. Pat dry with paper towel and place on serving platter. Cover with plastic wrap and put in refrigerator to get real cold.
  • When ready to serve, uncover, drizzle with olive oil and sprinkle with sea salt, fresh ground pepper and fresh grated hard cheese.

Notes

This is a wonderful recipe that everyone seems to enjoy. The cold, mild flavor of the asparagus is delightful. Even those that don't eat asparagus like it. I have brought it to parties as a buffet item and it disappears. An easy and delicious finger food for an appetizer. Great with just about any kind of entre. If you cook the asparagus the night before, put oil, salt and pepper on just before serving time. Enjoy.

    I used the same ingredients, but instead of serving them cold, I marinated my asparagus and then grilled it. It was delicious.
