  • Prepare cake mix as directed but add the can of mandarin oranges to the mix at the last minute. Beat 30 seconds and bake.
  • In separate bowl mix cream cheese and pineapple together well, then fold in Cool Whip, place in fridge until the cake is cool.
  • Let cake cool completely, and then add Cool Whip mixture on top. Keep in fridge until ready to serve.

Notes

In the summer I make this into a punch bowl cake. I layer the cake and Cool Whip mixture with a layer of strawberries and vanilla pudding. I have made this for 4 years for our New Years Eve parties. It’s always a hit and it’s always a request. Enjoy!!

    I used coconut cake mix and added a little powdered sugar to the topping mixture. It was a great hit!!!!!!!!!!!!
