  • Peel & cut potatoes into cubes. Put into large pot with water (just enough to cover the potatoes). Cook for 30 minutes on medium heat.
  • Slice onions and add to pot. Add the juice from the 3 cans of corn and cook another 30 minutes. Add all remaining ingredients (except bacon). Mix well and lower temperature to med low or low. Cook until potatoes & onions are cooked through - stirring occasionally
  • The bacon is to be used as a garnish, so you can cook the bacon at anytime. You can add a tablespoon of the bacon grease if you want to the soup. Once the bacon has cooled, tear into small pieces so each person can add the amount they like.

Special Equipment Needed


If you are a vegetarian - instead of bacon you can use fake bacon bits or any kind of crunchy topping. Serve with bread - A White Mountain, Pumpernickel, or whatever you want.
