  • Make the cornbread according to the instructions on the package.
  • Fry the bacon and crumble. Cut bell peppers into squares. Slice only the white part of the onions.
  • When cornbread is done, cut into small squares, about a 1/4 inch, and mix in bell peppers, bacon, onions, tomatoes and mayonnaise.
  • Refrigerate for 30 minutes and serve.

Notes

I find most people have never heard of cornbread salad and are willing to try something new. It is a great crowd pleaser and you can vary it by adding cheese or chick peas etc.

    Everyone loves this recipe! I also added 1/2 of a small can of corn and only used 1/2 of a green pepper.
