  • Boil water and add salt and a few dashes of hot sauce. Reduce heat, add rice, and cover and cook for 20 minutes.
  • While the rice is cooking, in a small sauce pan do the following: Heat sour cream until hot, but not boiling. Add the corn, green chilies, and salsa. Heat until hot, stirring occasionally. Add the cheese and stir until melted.
  • By this point the rice should be done. Give it a stir with a large spoon and add in the sour cream mixture. Stir until combined (should be sticky). Add salt, pepper, and hot sauce to taste. Pile high on scooping corn chips.

Special Equipment Needed


This dip is great for parties and as a midnight snack. Store leftovers in a sealed container in the fridge. It reheats great, just give it a little stir every 30 seconds. Also, if you don't like spicy, omit the hot sauce and green chilies, but try to find a mild salsa that you like. The salsa gives this dip a nice pink color, and without it it can turn out an odd orangy-beige.
