  • Mix the meat, onion, bell pepper and the seasoning in a skillet on the stovetop, brown completely and drain excess fat. Then prepare the cornbread mix according to package directions in a bowl on the side.
  • Now put 1/2 the meat mixture into an 8" round cake pan sprayed with nonstick spray. Now mix into the meat 1/2 the can of tomatoes and chilies, 1/2 the can of corn drained, and 1/4 of the package of cheese and mix well. Do the same with the rest of the meat and ingredients in a separate 8" round cake pan.
  • Now pour the prepared cornbread mixture onto the tops of both pans of meat.
  • Bake according to cornbread package directions. When done, sprinkle the remaining cheese onto both casseroles to let it melt and serve while hot. Slice like you would a pie.

Please enjoy this recipe because I know my family really loved it. It's so easy, and makes a big serving with just a few simple ingredients! You can also make one Big casserole with a much larger pan. This is a great step out of the ordinary.... Yeehaw!!!
