  • 1. Thaw the pastry sheet in the package until it is pliable.
  • 2. Preheat oven to 400 degrees F.
  • 3. In a small bowl beat the egg with 1 teaspoon of water to make egg wash. Set aside.
  • 4. Roll out pastry dough into a 14 inch square. Cut off the corners to make a circle and save the extra dough.
  • 5. Spread the apricot preserve on the dough leaving about 2 inch margin around the edges.
  • 6. Pour the orange juice and the cranberries into a small bowl and let soak for about 5 min until the cranberries are soft. Then drain the cranberries and arrange them on top of the apricot preserve. Arrange the almonds on top of the cranberries and place the brie on top of the almonds.
  • 7. Brush the edges of the pastry with the egg wash. Seal the brie in the puff pastry and then seal the edges with the egg wash.
  • 8. Spray a baking sheet with non stick spray and place the brie seem side down on the baking sheet. Decorate the top with the leftover pastry dough.
  • 9. Bake for 20 min.
  • 10. Allow to sit for at least 30 min before serving.
