  • Preheat oven to 375 degree. Place rack in middle of oven. Line cookie sheet with parchment paper. In large bowl, whisk flour, sugar, baking powder and salt. Cut butter into small pieces and blend into flour mixture with pastry blender or two knifes. Mixture should look like coarse crumbs. In small bowl combine beaten egg, vanilla and cream and add to flour mixture; stir until just combined. DO NOT OVER MIX.
  • Knead dough gently on lightly floured surface. Roll or pat the dough into circle 7 inches round and 1 1/2 inches thick. Cut this circle into eight triangles or cut dough into rounds with cookie cutter.
  • Egg Wash: Mix egg and cream. Brush the scones with this mix to help with browning.
  • Bake about 15 minutes or until lightly browned and a tooth pick into center comes out clean. Remove from oven and turn broiler on high. Sift powered sugar heavily over the tops and place under broiler for a few seconds turning pan as needed till the sugar melts and turns golden brown. Cool on wire rack.
