  • Measure flour by dipping. Mix flour, 1 cup soft butter and whipping cream thoroughly. Chill 1 hour.
  • Roll to 1/8 thick on slightly floured board. Cut into 1 1/2 inch circles. Transfer to waxed paper heavily sprinkled with granulated sugar, turning to coat both sides.
  • Place on ungreased baking sheet. Prick 3-4 times with fork. Bake at 350 degrees 7-10 minutes or until slightly puffy. Cool on cookie rack.
  • Cream together 1/4 cup soft butter with sifted confectioners' sugar. Add egg yolk and vanilla. Blend together. Add coloring of your choice
  • When wafers are cooled assemble by matching like sizes of wafers and adding butter cream filling to middle.

Choose two different colors depending on what holiday. Make 2 batches of the cream filling-one just doesn't seem to be enough. These are my favorite cookie-for any holiday or special occasion.
