  • In a large skillet, lightly brown chicken in olive oil and salt/pepper. Meanwhile, boil pasta in a separate saucepan 8-9 minutes. Pasta will not be fully cooked.
  • Remove the chicken from the skillet, cut into small cubes and return to skillet. Add cream of mushroom soup, milk, garlic, and peas to chicken in skillet.
  • Drain pasta and add to skillet. Bring to a slow simmer 4-5 minutes (stirring occasionally) or until pasta is tender. Remove from heat and add spinach. Let stand until spinach has wilted.

Special Equipment Needed


Use wheat pasta and fat free cream of mushroom soup for a low fat meal. This is a great low fat alternative to Fettuccini Alfredo.
