  • 1. Heat large nonstick skillet over medium heat.
  • 2. Crumble turkey into skillet and add onion; cook stirring frequently until browned.
  • 3. Add 1 cup of the salsa, spinach, cream cheese and cumin.
  • 4. Cook and stir until cream cheese melts.
  • 5. Remove from heat.
  • 6. Spoon about 1/2 cup of the turkey mixture across center of each tortilla.
  • 7. Roll up and place seam-side down in 9 x 13-inch baking dish that has been lightly coated with no-stick cooking spray.
  • 8. Pour remaining salsa over center of tortillas.
  • 9 Bake uncovered in 350 degree F oven for 25 to 30 minutes or until thoroughly heated.
  • 10. Sprinkle cheese over top.
  • 11. Place lettuce on individual serving plates. Top with an enchilada and a dollop of sour cream.
