  • Preheat oven to 450 degrees. Cut up all vegetables to bite size pieces. Saute all vegetables in some olive oil and minced garlic till they are cooked and reduced by half. Sprinkle in salt, pepper and parsley to taste. Warm Alfredo sauce in a pan before using, this will help spread the sauce more evenly. Spray foil or glass lasagna dish with a non-stick cooking spray.
  • Layer lasagna as directed:
  • 1st layer is Alfredo sauce, vegetables, noodles.
  • The rest of the layers are vegetables, Alfredo sauce, cheese, noodles.
  • Make sure last layer on top of lasagna is the layer of cheese.
  • Continue layers till desired amount.
  • Cover lasagna with foil and bake for 1 hour. Take foil off and cook for about 15 minutes or until cheese is brown.

Special Equipment Needed


Thawed spinach will need to be drained before it is sauted with the other vegetables, otherwise there will be too much liquid in the pan with the cooked vegetables. Using a food processor will get the vegetables nice and small to layer your lasagna with. This saves time. Other spices may be added in to taste.
