  • 1. Preheat the oven to 350 degrees.
  • 2. Separate the eggs and put yolks into a small bowl.
  • 3. Put your sugar and heavy cream into a mixing bowl and stir gently with wire whisk.
  • 4. Microwave cream and sugar on high for 2 minutes to allow the sugar to dissolve.
  • 5. Stir egg yolks with a wire whisk so that they are broken up and smoothed out a bit.
  • 6. Combine egg yolks, heavy cream mixture, vanilla and a dash of salt.
  • 7. Whisk well.
  • 8. Pour into 6 (four ounce) custard cups or ramekins and set them into a roasting pan.
  • 9. Fill roasting pan with hot water so that the water comes up on the ramekins halfway.
  • 10. Bake at 350 degrees for 40 minutes.
  • 11. Remove ramekins from pan and let them cool for 10 minutes.
  • 12. Place ramekins in fridge for about 12 hours to make the custard firm or a few hours and they will be edible but much more creamy.
  • 13. Before serving, sprinkle sugar onto the tops of the custard.
  • 14. Use a butane torch to caramelize the sugar or a propane torch set on low heat.
  • 15. Place back in fridge for a few minutes to let the crust set up.
  • 16. Enjoy!
