  • Cream butter; gradually add sugar, beating until fluffy. Add egg, and mix until well blended. Add flour and salt, mixing well. Chill about 30 minutes.
  • Working with half of dough at a time; store remainder in refrigerator. Roll dough to 1/8-inch thickness on a sheet of waxed paper (dough will be soft).
  • Cut dough with a 2-inch cookie cutter. Place cookies on cookie sheet. Bake at 325F for 7 to 8 minutes; do not brown. Remove cookies to wire rack; let cool completely.
  • Combine powdered sugar and creme de menthe; beat until smooth. Spread about 1 tsp. evenly on the flat side of half of cookies; top with a second cookie. Drizzle melted chocolate on each cookie.


I use a variety of holiday shaped cookie cutters depending on when I'm making the cookies.
