I usually double this recipe; I make half that day and freeze the other half of meatballs after browning. When I don't have time to cook, I can start the meatballs around noon and forget them until dinner time. I usually serve them with either noodles or rice, but they're great with mashed potatoes or by themselves.
I'm not a big mushroom fan, so I omitted the can of mushrooms and it still turned out great. I did have to add another 1/4 cup water, but this is one my family really enjoys.
