  • In bowl, mix pumpkin, sugar, oil, and eggs well. Add flour, baking powder, cinnamon, nutmeg, and salt.
  • Pour into sprayed or greased cookie sheet.
  • Bake 30 min at 350°F (or till knife comes out clean). Let cool.
  • Frost with favorite cream cheese frosting or you can use: 2 cups powder sugar, 3 oz. cream cheese, 6 Tbsp. oleo softened, 1 tsp. vanilla, 3-4 tsp. milk, 1/2 cup finely chopped nuts.


This is a good sheet cake for holidays, and freezes well.

    This is the same recipe I have used for years but I called it Pumpkin Bars. I recently started to make it for Thanksgiving and could not find my recipe. I turned my kitchen upside down looking. I was so pleased when I found it on your sight. Believe me it is a wonderful cake and everyone loves it. It is also simple to make. It is similar to gingerbread cake. It does freeze well. Thanks again.
