  • Preheat oven to 350 degrees F. Saute zucchini, squash, and onion five minutes in olive oil over medium heat until starting to caramelize. Place in a sprayed 9-inch pie plate.
  • Mix eggs with water. Add seasonings to eggs, mix well. Add ham, turkey, bacon, and tomatoes to egg mixture. Pour over sauteed veggies in pie plate. Sprinkle with shredded cheese.
  • Bake 30 minutes, or until golden and puffy.

Notes

Great for a South Beach Diet recipe, phases 1, 2, and 3. Can also add a few drops of hot sauce for a little kick.
