  • Preheat oven to 325 degrees. To prepare meat, trim off and discard excess fat. Make small slits all over the meat and insert a thin slice of garlic into the slits. Rub the oregano, salt and pepper on the meat. Pour half of the juice over the meat.
  • Roast until the meat is well done and the fat is crisp - about 25 minutes per pound. Baste with the remaining juice.
  • Garnish with sliced onion and thin wedges of lime.

Notes

It is customary to serve Cuban pork without gravy and to accompany with yellow rice and black beans and fried plantains.
