  • Boil the entire box of rotini pasta according to instructions on the box, drain the pasta and place in a bowl to cool. While the pasta is cooling, peel and dice the cucumbers and place them aside. Dice the Roma tomatoes and place them to the side.
  • Test your pasta first to make sure that it is cooled, and you can do this by sticking your hand into the pasta. One you make sure the pasta is cool then you toss in the cucumbers and tomatoes. Make sure that you toss it well.
  • Now you add the entire bottle of light Italian dressing and toss into the salad. Make sure to coat everything with the dressing. Once the dressing is tossed in well, then add salt and pepper to taste and toss once more to incorporate the seasoning. And you are done!

Special Equipment Needed


You can eat right then or put it in the fridge and chill it for a while. (I like it chilled, the flavors are much more intense if the whole thing is chilled) You can substitute the garden style rotini pasta for the plain rotini pasta. (I personally like the garden style it gives it more color and flavor.)
