  • Preheat oven to 400 degrees. Wash potatoes, and then completely dry the skins with paper towels. Lightly oil the potatoes with cooking oil, and wrap them each with aluminum foil.
  • Place wrapped potatoes on a large cookie sheet several inches apart for even baking. Bake in oven approximately 1 hour. LEAVE OVEN ON because potatoes will have to GO BACK IN the oven.
  • When done, using potholders, remove potatoes, split all potatoes lengthwise on top down the middle. Squeeze each potato a little (vertically and horizontally), so it will be easy to remove the pulp out of the potato, leaving about 1/4 layer of the potato in the skin, to leave the shell intact.
  • Place ALL HOT pulp in a mixing bowl. Add milk (just enough to moisten potato mixture), butter (enough to make creamy) and the rest of the ingredients to mixture and use a hand mixer to mix to a close to creamy consistency/mixture. If desired, add optional items (onions and green peppers), and mix again. Scoop mixture back into each potato shell without overfilling.
  • Place each filled potato back on the cookie sheet a few inches apart and bake again for about 15 - 20 minutes or until the top of potato mixture is a little brown. Remove the potatoes and ENJOY!!

SUGGESTIONS: You could serve the potatoes as a single meal, or you could serve as a side dish. Toppings for these potatoes could include cooked chopped chicken, steamed veggies, chili, browned ground beef or use your own imagination!
