  • Mix all ingredients together in large mixing bowl. Add fruits and chocolate chips to taste depending on amount of ricotta. It should look colorful.
  • Use home made waffle cones for the shells. Make waffle cones as directed one at a time.
  • Place the waffle cone on paper towel and fill each cone, as it comes off the iron with about 3-4 Tbsp. of cannoli filling. Spread the filling into a strip along the closest end of the cone. Try not to over stuff. Roll the cone around the filling into a tube shape. Work quickly because the cone will harden as it starts to cool. Set rolled cannoli aside with the seam side down.
  • When finished, place a cherry in each end of the filled tubes. Dust with powdered sugar.
  • Refrigerate for 2-4 hours and serve chilled.

Special Equipment Needed


Smaller waffle cones make better sized cannolis. Just put about a tbsp of waffle cone mix in the center of the iron for best results. This recipe takes a little longer to make than most, but it's well worth the wait.
