  • Heat oil in large skillet over medium high heat. Cut the eggplant into 1/4 inch slices. Slice garlic cloves. Once the oil begins to smoke add eggplant and garlic. Add about 1 Tbsp. salt and 1 tsp. of pepper. Allow eggplant to soften and change color completely.
  • The salad:
  • Chop romaine and place in a large bowl. Largely dice the tomatoes and add to the bowl. Peel cucumbers in 1/4 inch sections (peel, no peel, peel, no peel) in order to get the look of light and dark green in the salad. Slice the cucumbers and add to the bowl. Shred the carrot lengthwise into the bowl; toss together. Top with eggplant and favorite dressing.
