  • Pizza:
  • Set a rack in the upper third of the oven; preheat to 350°F. Coat 2 baking sheets with cooking spray.
  • Whisk whole-wheat flour, cake flour, baking powder and salt in a medium bowl.
  • Melt butter in a small saucepan over low heat. Cook, swirling the pan, until the butter turns a nutty brown, about 1 minute, and pour into a mixing bowl. Add sugar and oil; beat with an electric mixer until smooth. Mix in egg and vanilla; beat until smooth. Add the flour mixture and mix on low speed until just combined.
  • Roll dough on a lightly floured pizza pan to a thickness of 1/8 inch.
  • Bake the cookie in the upper third of the oven, 1 sheet at a time, until slightly golden on the edges, 5 to 7 minutes. Do not overbake. Transfer to wire racks to cool.
  • Assembly:
  • After the cookie has cooled, evenly spread the cream cheese over the top but not quite to the edge. Start in the center of the pizza and layer the tangerine slices in a ring. Overlap the kiwi slices in a ring around the tangerines. Line the blueberries in a single ring around the kiwi. Lastly, lay the strawberry slices next to each other all the way around the perimeter of the pizza.
  • Final touch:
  • Heat up the fruit spread and stir in the spices. Brush evenly over the fruit and chill in refrigerator before slicing into 8 wedges.

Notes

Other fruit spread flavors can be substituted for the apricot. The spices can also be omitted for a slightly different flavor. Experiment with the combination of fruits throughout the year, using apples, pears, grapes, and dried fruit during the fall and winter months.
